Foods:
Chicken (I use boneless/skinless breasts because I'm lazy, one per person)
Veggies (again, I'm lazy, so I usually buy some bag of mixed/cut/washed stuff)
Marinade:
1 Tbsp Oil
3 Tbsp Soy Sauce
3 Tbsp Sake (or dry sherry)
1" Ginger, minced
1 Clove garlic
Sauce:
1/4 cup chicken broth
1 tsp cornstarch
1 1/2 Tbsp Oyster Sauce
Marinade meat for about a half hour then stir fry until browned.
Set meat aside and stir fry veggies for a minute, then add chicken and sauce. Continue cooking for a few minutes until the sauce thickens a little, the veggies get slightly tender, and stop before the chicken gets rubbery.
Check the biggest piece of chicken you can find to see if it's cooked through (I'm paranoid). If it is, serve the food, eat over rice. Yum.
